        生物嗅觉和味觉系统具有敏锐的气味和味质感知能力,被认为是自然界最高效的感测系统之一。随着人类社会的发展,气味和味质传感与检测技术对于提高人类的生存质量,保障人类健康具有越来越重要的意义,已被广泛应用于食品安全、环境监测和疾病诊断等领域。文章介绍了仿生嗅觉和味觉传感技术的发展,包括电子鼻和电子舌化学传感技术,基于生物敏感材料的仿生嗅觉和味觉传感技术的原理、组成、技术实现及其应用;此外,还介绍了基于脑机交互的新型在体生物电子鼻和电子舌的研究进展;并对国际上仿生嗅觉和味觉传感技术领域的发展趋势进行了展望。
英文摘要
        The mammalian olfactory and gustatory system is recognized as the most effective chemosensing systems due to their extraordinary ability in odor and tastant detection. Detection of odors has been applied to many real applications, such as quality control of food products, safety and security, environmental monitoring, medical diagnosis and so on. Here, we focus on the principle, basic composition, employed technology and application of electronic nose/electronic tongue, molecule and cell based olfactory/gustatory biosensors. We also introduce the research progress of a novel system which we called ‘in vivo bioelectronic nose and tongue’. Finally, the further trend in this area is forecasted.

Wang Ping Professor of Biomedical Engineering of Zhejiang University,Director of Biosensor National Special Laboratory,and Director of Key Lab for Biomedical Engineering of National Education Ministry of China,Zhejiang University.He is an international advisory/organising board member of Biosensors and Bioelectronics Symposium (BBS),member of The International Society for Olfaction and Chemical Sensing (ISOCS),member of Asia-Pacific Regional Steering Committee of International Meeting on Chemical Sensors (IMCS).member of International Steering Committee of Asian Conference on Chemical Sensors (ACCS).Besides,he is a visiting scholar at Edison Sensors Laboratory of Case Western Reserve University,USA,and Biosensor and Bioinstrumentation Laboratory in University of Arkansas,USA,in 2002 and 2005,respectively.He also serves as the editorial board member for Microsystems & Nanoengineering,Scientific Journal of Microelectronics,guest editor and peer reviewer for Biosensors and Bioelectronics,Sensors & Actuators A,Sensors & Actuators B,IEEE Sensors Journal,Sensors Letters,and Sensors and Materials,associate Editor-in-Chief for Chinese Journal of Sensors and Actuators,and so on.He has published about 250 academic papers,5 monographs in Chinese or English,holds one international patent and more than 30 patents in China.E-mail:cnpwang@zju.edu.cn
